  1. Heat the oil over a medium heat in a HexClad 30CM Hybrid Fry Pan. Add the onion, yellow pepper, and garlic and season with salt and pepper. Cook, stirring occasionally, until onion and pepper are softened, about 5 minutes.
  2. Add the wine if using, and let boil until reduced by half, about 2 minutes. Lay the fish on top of the veg, scatter in the olives and season the fish with salt. Cover with a lid and steam the fish until just cooked through, about 5 minutes.
  3. Remove from the heat and sprinkle with herbs and lemon zest. Squeeze over the lemon
